SAVE THIS RECIPE![[💥SAVE THIS RECIPE💥] Diversity is the spice of life. Here’s my nutritional twist on this high protein lentil dish usually served over hot rice. I top it with raw shredded cabbage, roasted cherry tomatoes, air fried broccoli and a drizzle of homemade mustard curry leaf oil (recipe coming soon). Don’t be afraid to be inclusive and mix everything all in.

INGREDIENTS
2 tbsp coconut oil
1 red onion, sliced
7 cloves garlic, chopped
1 thumb-sized ginger, sliced
2 tbsp butter
2 tsp cumin seeds
2 tsp mustard seeds
1 tsp nutmeg powder
6 cardamom seeds
2 cinnamon sticks
3 dried bay leaves
1 tbsp turmeric powder
2 tbsp garam masala
4 green chillies, sliced
3 cups red lentil
2 large sweet potatoes, chopped
3 carrots, chopped
3 tbsp tomato paste
1 can chopped tomatoes
2 tsp salt
2 stock cubes - vegetable or chicken
6 cups water, more as needed
200ml coconut cream (at the end)
TOP WITH
plain Greek yoghurt
vegetables of choice
fresh cilantro, chopped
more green chillies if you like things spicy!
Made in the @instantpotsingapore for a fuss-free one pot meal. You can make it over the stove too - same steps just longer cooking time (about 90 minutes vs 15 minutes in #instantpot)

250ml bottle of sauvignon blanc
300g x 2 USDA Super Prime Ribeye
250g Giuseppe Cocco Egg Fettuccini
ADDITIONAL INGREDIENTS
salt & pepper, about 1 teaspoon each
250g/9oz swiss brown mushrooms, sliced
1 large onion, sliced
5 cloves garlic, minced
2 tbsp butter
2 tbsp flour
2-3 cups of pasta water
2 beef stock cubes
1-2 tbsp dijon mustard

![[💥SAVE THIS RECIPE💥] Inspired by Vietnamese Grilled Fish (Cha Ca), this easy airfryer version is made in just 10 minutes & is packed with flavour. The portion below feeds 4-6. #foodforthought
FOR THE FISH
about 800g red snapper/threadfin fish, or 6 fillets
few dashes of rice vinegar
2 tsp turmeric powder
1 tsp salt, or as desired
1 tsp dried dill
1 tsp each ginger, garlic and onion powder
1 tsp ground lemongrass
½ teaspoon white pepper
½ teaspoon black pepper
small drizzle of olive oil
GARNISH
10 spring onions, cut into 2-inch long pieces
1 bunch of coriander
mint leaves
fresh dill
salted peanuts, crushed
SERVE WITH:
2-3 tablespoons of sauerkraut
Brown rice
raw carrots, cherry tomatoes & arugula (or other vegetables of choice)
a dash or two of fish sauce, if desired
INSTRUCTIONS:
Pat each piece of fish with paper towels to remove any moisture. Sprinkle a few dashes of rice vinegar & some salt. In a small dish, spoon out all the seasonings, stir & then coat each fish with the mixture. Drizzle some olive oil (please refrain from using peanut, canola or vegetable oil as these are highly inflammatory. I only use olive, avocado & coconut oil for cooking). Airfry for 6min at 205ºC/400ºF skin side up, flip over & airfry for an additional 4 min. Serve with sauerkraut, brown rice, spring onions, coriander, peanuts & a side of raw vegetables.

Yellow noodles, about 600g
Baby wongbok, about 350g
Oyster mushrooms, 300g
250g Brown Mushrooms, sliced
400g Tau Kwa (firm tofu), cut into cubes
leftover shabu shabu - pork & beef, about 600g
coriander
cherry tomatoes
5 cloves garlic, smashed & minced
1 red onion, sliced
1 tsp black peppercorn, crushed
1 tsp green peppercorn, crushed (optional)
½ cup sake or Chinese wine
sauces to taste: sambal, dark soy sauce, light soy sauce, sesame oil
water, as needed
